Syksyinen Kurpitsakeitto

Tässä herkullisen kurpitsakeiton resepti, johon mukavaa twistiä tuo kanelibasilika. Kanelibasilika oli itsellenikin aivan uusi tuttavuus. Sopii hyvin syksyisen talvikurpitsan kaveriksi. Kookosmaito tuo mukavaa kermaisuutta ja bataatti makeutta. Mausteeksi riitti ruususuola ja mustapippuri. Suolaa ja mustapippuria kannattaa laittaa oman maun mukaan.


Here is the recipe of my winter squash soup I made earlier this week. Cinnamon basilica is a new for me as well, but it brings a nice twist to this soup. Coconut milk makes it creamy and sweet potato brings nice sweetness on it. Good quality salt and black pepper was enough to spice it up. Just add as much or less you like it.







                                Lämmin Kurpitsakeitto 

                                            1/2 Talvikurpitsa/ 1/2 Winter Squash
                                                     1 Bataatti/ 1 Sweet Potato
                                     1dl Tomaattimurskaa/ 1dl chopped Tomatoes
                                        2 Valkosipulinkynttä/ 2 garlic gloves 
                                1/2 purkkia Kookosmaitoa/ 1/2 can of Coconut milk
                                              Kanelibasilikaa/ Fresh Cinnamon Basilica 
                                                          Suolaa/ Salt
                                                 Mustapippuria/ Black Pepper
                                                           Vettä/ Water

Chop winter squash and sweet potato and put it in the casserole with 1 tbsp of coconut oil and leave it for few minutes. Then add water, just to cover the roots. Let it boil and add the crushed garlic cloves, chopped tomatoes & cinnamon basilica. When the roots are soft, add the coconut milk and spices. Make it smooth with blender or hand mixer. Taste & Enjoy 🙂
